History of coffee
The coffee-plant with its evergreen, laurel- like leaves bears white flowers smelling of jasmine. On the branches blossoms and fruit appear at the same time. During the ripening process, the coffee-cherry changes its colour from green to yellow to dark red.

There are over 60 different coffee-tree-types, but only two of them are of economic importance. One of them is Coffea Arabica and the other is Coffea Robusta. They are cultivated round the equator.
Arabica - beans have the most distinctive flavour. They mainly grow in the highland.
The Coffea Robusta grows faster, is more productive and more resistant. This kind of coffee is planted in lower regions because of its good heat- resistance.

The beautiful appearance is the result of a lot of care.
The picking of the cherries however is the same with both coffee types. Since not all fruit ripen at the same time, they have to be picked several times. This laborious work is still done by hand even today. In each cherry there are two coffee-beans. They have a round or oblong shape and their colours are grey, greenish-blue, greenish-grey or blue-grey.
